Bakefest!

Bakefest is probably a relative term, but for me, this is a lot of baking and cooking! We're taking food to our friend tonight (see baby post below), so I made chicken pot pie, salad, Rice Krispy treats, and brownies. Okay so the brownies are really for tomorrow night, and I just wanted Rice Krispy treats. So I'm giving them a few of each.

Betty Crocker's Chicken Pot Pie Recipe

10 oz. frozen veggies (peas, carrots, corn, etc)
2 T butter, melted
1/2 c. all purpose flour (I use whole wheat.)
1/2 c. chopped onion
1/2 t. salt
1/4 t. pepper
1 1/2 c. chicken broth
2/3 c. milk
2 1/2 - 3 c. cut up chicken (or turkey)
2 rolled pastry crusts

Mix butter, flour, salt, pepper, and onion together in sauce pan on medium. Then remove from heat, and add broth and milk. Heat to boiling. Stir in chicken and veggies. Remove from heat.

Roll out one pastry crust into pie dish. Pour in the mixture. Then roll out the other crust and cut a couple holes in the top. Add the top layer of crust.

Bake at 425 for 25-35 min.

Homemade Brownies

2 c. sugar
1 c. butter, melted
1/2 c. cocoa
1 t. vanilla
4 eggs
1 1/2 c. flour (I use whole wheat.)
1/2 t. baking powder
1/2 t. salt
13x9 baking dish

Mix ingredients. Bake at 350 for 20-30 min.

I like this recipe because you can make it semi healthy with organic ingredients and whole wheat flour. The flour doesn't seem to change the taste - though in other recipes, ie banana bread, etc - it does. I really just use it because I don't keep white flour around.

Rice Krispy Treats

Easy recipes make me happy!
1 bag marshmallows
1/2 box Rice Krispies
3 T butter

Melt butter and marshmallows on high for 2 min, stirring after each minute. Sticky, sticky! Then add the Rice Krispies (quickly) and stir. I prefer to add slowly so I can decide how much more I want to add. Pour (or push the stickiness) into a 8x8ish baking dish. Then let cool!

  2. You could use granulated Splenda and sub out some or all of the sugar in the brownies if you want to cut back on sugar. In the type of baked goods that don't need sugar to crystalize, Splenda works well. Of course, everything in moderation, so if you already consume a fair amount of artificial sweeteners elsewhere... just use your judgement!
